Today is Mexican Independence Day (the real Cinco de Mayo), so celebrate it with this juicy tequila cocktail recipe. The best ‘rita is one that’s fresh and uses top quality ingredients like silver tequila (100% agave), orange liqueur (such as Patron Citrónge or Cointreau), freshly squeezed lime and prickly pear cactus juice (no prickly pear syrup), sea salt flakes and a dash of blue agave nectar.

Prickly Pear Cacti (Opuntia Ficus-Indica), are native to the Western Hemisphere and are abundantly found in the Southwest United States as well as central and western Mexico. Prickly pear fruit is often called cactus figs, Indian figs as well as tunas. They come in three colors; white (or greenish), yellow and red. If you’re a fan of watermelon, juicy pears and or honeydew you’ll love the taste of prickly pear fruit. And like their name, the outside of the skin is extremely prickly. So be sure to handle the outer fruit with care!
